Pumpkin Sugar Cookies

Cold weather makes me want to turn on the oven, and with my brother-in-law’s birthday this week, I had a good excuse. Enjoy these delicious cookies!

Sugar Cookies

2 eggs
2/3 cup cooking oil
2 tsp vanilla
3/4 cup sugar
2 1/2 cup flour
2 tsp baking powder
1/2 tsp salt

Beat eggs with fork until well blended. Stir in oil, vanilla, and sugar.

Add 2.5 cups flour, 2 tsp baking powder, and 1/2 tsp salt.

Roll the dough to 1/4″ thick  onto a floured surface and use cookie cutters to create your favorite shape. Place on a parchment-lined baking sheet at 350 degrees for 8-10 minutes or until “delicate” brown.

I used this delicious buttercream frosting for the top.
