Parmentier Potatoes

Of the entire Titanic meal, except maybe dessert, these were the easiest. I think they also helped my guests enjoy the meal a little more. You see, we’re from Idaho and my family eats potatoes every Sunday. Since it was my family who joined us, something familiar helped a lot.

Parmentier Potatoes
adapted from Downton Abbey Cooks (who adapted it from Last Dinner on the Titanic)

1 lb. baking potatoes
2 Tbsp. olive oil
Salt and pepper
Additional herbs (rosemary, parsley, etc.)

  1. Preheat oven to 400 degrees F.
  2. After washing the potatoes, slice off the rounded edges until you have a rectangle. Use the rectangle to dice the potatoes into small squares.
  3. Place in baking dish, add olive oil, salt and pepper, and herbs. Toss to coat.
  4. Bake for 25-30 minutes until golden brown.

The potatoes didn’t reach the crunchy outer texture I was looking for, so I fried them on the stove afterward with a little extra olive oil.
