Food for a Road Trip (and a tomato-basil omelet recipe)


All right, everyone (or the one person that reads this blog), I need some help. 

I am looking for great, healthy (and delicious) road trip snacks. Anyone have any go-to ideas?

I’m thinking this granola looks good, but what about sandwiches. Anyone know of any sandwiches that don’t go bad? 



While you’re thinking, here’s a simple, decadent breakfast idea for you in return.

Ingredients (serves one)

  • 1 whole egg
  • 1 egg white
  • 2 – 3 basil leaves, chiffonade
  • one handful of halved cherry tomatoes
  • salt and pepper
  • Parmesan cheese

Mix the whole egg and egg white. Spray a bit of cooking spray on the nonstick pan. Pour the egg mixture into the pan and roll it around the pan until it is spread evenly. Let it cook for two to three minutes. 

Add the basil, tomatoes, and cheese to one half of the omelet. Sprinkle with salt and pepper. Let it cook for just a minute or two more. As it begins to turn opaque, fold the omelet in half with your spatula and let it cook the rest of the way. I like mine a little less done. It’s up to you.
